The Problem With Processed

The problem with processed food is, flavours often dont survive the freezing and storage process.  The chemicals break down, mix and combine, and you're left with.. Dun Dun DUNN.. The Bland.

So, what can a prepared food maker do?  Well, sugar, oils and fat are all cheap, and they store great. They also are very 'satisfying'.

They also happen to be high in calories.

Sugar and other carbohydrates, like rice, bread and pasta also have an added side effect.  When they are absorbed into the bloodstream, the pancreas starts pumping insulin, which triggers muscle and fat cells to start absorbing the sugar, to decrease sugar levels in the bloodstream.
This often 'overshoots' - too much sugar is removed, and you feel hungry again.  (Chinese food, hungry again an hour later? This is generally what's going on.  Same thing with popcorn and soda).  The end result is, you're hungry again, and want to eat more.
Food producers don't mind this side effect.  It's good for business.

'Low-fat' is usually a lie.  The fat is replaced with sugar or other calorie sources.   So, the 'low-fat' or even 'no-fat' version of things might have 80% of the calories of the same sized 'full flavor' product.

Fat isn't an enemy, as long as you watch the calories.  Take a look at the cottage cheese labels.  There is 'regular', 'low fat' and 'fat free' varieties in my grocery. The regular is 120 calories per half cup, 'low fat' is 100, and 'fat free' is 80.  You save 40 calories going from full-flavor to sandpaper, and the fat free version leaves you hungry.
